Lemon-Truffle Mushrooms
Tips
- •Do not crowd the mushrooms in the pan, or they will steam instead of browning.
- •Always stir in the truffle oil after cooking, as its aroma is lost at high heat.
- •For a more intense truffle flavor, you can also add a few thinly shaved truffle slices.
Steps
- 1
Clean the mushrooms with a cloth and slice them thinly. Finely chop the garlic, roughly chop the parsley, and finely grate the lemon zest. Then halve the lemon.

Bring a large pot of plenty of water to the boil. Once boiling, add the salt and cook the tagliatelle according to the package instructions until al dente. Reserve about 150 ml of the pasta water.

While the pasta is cooking, heat the olive oil in a large pan over medium-high heat. Add the mushrooms and fry vigorously for 5 to 7 minutes, until browned and their liquid has evaporated. Only then add the garlic and fry for 30 seconds, so it does not burn.

Reduce the heat to medium and stir in the heavy cream, half of the lemon zest, and plenty of black pepper. Simmer gently for 2 minutes. The sauce should thicken slightly but should not boil vigorously.
