Cut the beef across the grain into very thin strips. Remove the tough stems from the kale and chop it. Prepare the garlic and ginger, and slice the spring onions into rings. Have all the ingredients ready beside the stove, as the cooking goes quickly.

For the seasoning sauce, whisk together the soy sauce, rice vinegar, sugar, cornstarch, and water until smooth. The cornstarch settles quickly, so stir the sauce again immediately before adding it.

Heat a wok or large skillet over very high heat until a drop of water evaporates instantly. Add the cooking oil and sear the beef in batches for 1 to 2 minutes, until browned on the outside but still tender inside. Remove it from the wok to prevent it from overcooking.

Reduce the heat to medium-high. Stir-fry the garlic, ginger, and chili flakes for 20 to 30 seconds, until fragrant but not browned.

Add the kale and stir-fry for 2 to 3 minutes. If it looks very dry, add 1 to 2 tablespoons of water. It should remain bright green and slightly crisp.
