Heat 3 tbsp of the olive oil in a wide sauté pan over medium-high heat. Add the eggplant in a single layer as much as possible and cook for 8-10 minutes, turning occasionally, until deeply golden on several sides and tender in the centre. If the pan looks dry, add a little more oil. Transfer to a plate.

Add the tomatoes, olives, capers, the remaining sea salt, and the black pepper. Cook for 6-8 minutes, stirring occasionally, until the tomatoes break down into a loose sauce and the oil begins to separate slightly around the edges.

Return the eggplant to the pan. In a small bowl, stir together the red wine vinegar and caster sugar, then pour it into the pan. Cook for 2-3 minutes, gently folding everything together so the sweet-and-sour glaze coats the vegetables without turning them mushy.
