Tommy's Margarita

Ingredients
For the margaritas
- 120 mlblanco tequila
- 60 mlfresh lime juice
- 30 mlagave syrup
- 300 gice cubes
For the rim and garnish

- 1 piecelime wedge
- 2 pieceslime wheels

Chill 2 coupe or rocks glasses if possible. Spread the fine sea salt on a small plate. Rub the rim of each glass lightly with the lime wedge, then dip only the outer edge into the salt for a neat, balanced rim.

Fill a cocktail shaker with the ice cubes. Pour in the blanco tequila, fresh lime juice, and agave syrup.

Shake hard for 12-15 seconds, until the shaker feels very cold and the drink is well chilled. Proper shaking slightly dilutes the cocktail, which softens the alcohol and brings the lime and agave into balance.

Strain evenly into the prepared glasses. Serve straight up, or over fresh ice if using rocks glasses. Garnish each drink with a lime wheel and serve immediately.
