Nam Ma Phrao Chia

Ingredients
Chia-basil base
- 24 gchia seeds
- 10 gbasil seeds
- 400 mlcoconut water
Lime sweetener
- 30 mllime juice
- 20 mlmaple syrup

- 200 gice cubes

In a jug or bowl, combine the chia seeds, basil seeds, and coconut water. Stir very well, let sit for 5 minutes, then stir again thoroughly to break up any clumps; the second stir is important so the seeds hydrate evenly instead of sinking into one mass.

Stir in the lime juice and maple syrup until fully mixed. Taste and adjust with a little more lime for brightness or a little more syrup for sweetness if desired.

Fill 2 glasses with the ice cubes, then pour the chia-coconut mixture over the ice. Let it stand 2 to 3 minutes so the drink turns lightly thick and pleasantly slippery, but still pourable.
