Cocktail base

  • 180 mlsake
  • 60 mlcherry blossom syrup
  • 20 mlfresh lemon juice
  • 240 mlsparkling water

To serve

  • 300 gice cubes
  • 4 slicesthin lemon slices

    Chill 2 tall glasses if possible. Fill each glass about three-quarters full with ice cubes; plenty of ice keeps the drink crisp and prevents the sparkling water from going flat too quickly.

    In a small jug or measuring cup, combine the sake, cherry blossom syrup, and fresh lemon juice. Stir gently just until evenly mixed; do not shake, or you will dilute the drink unnecessarily before serving.
