Soju Mojito

Mint-lime base
- 20 gfresh mint leaves
- 60 mllime juice
- 30 gcaster sugar

- 180 mlsoju
- 120 mlsoda water
- 300 gice cubes
- 4 sliceslime slices
- 2 sprigsmint sprigs

Pick the mint leaves from the stems if needed. Divide the fresh mint leaves, lime juice, and caster sugar between 2 sturdy glasses. Muddle gently for 15-20 seconds, just until the sugar starts dissolving and the mint smells fragrant; do not tear the mint too aggressively or the drink can become bitter.

Fill each glass with ice cubes almost to the top. Pour 90 ml soju into each glass.

Top each drink with soda water and stir gently from the bottom once or twice to lift the mint and lime through the glass without flattening the bubbles.

Garnish each glass with 2 lime slices and 1 mint sprig. Serve immediately while very cold.
