Dark 'n' Stormy
Dark 'n' Stormy is a crisp, boldly refreshing cocktail with fiery ginger, deep molasses notes from dark rum, and a sharp squeeze of lime. Served over plenty of ice, it is simple to make yet striking in appearance, with its signature dark layer swirling into the golden mixer.
Ingredients
Cocktail
- 100 mldark rum
- 240 mlginger beer, chilled
- 1 wholelime
- 300 gice cubes
To garnish
- 2lime wedges
Instructions
- 1
Chill 2 highball glasses if possible. Cut the lime in half; squeeze one half to yield about 20 ml juice and cut the remaining half into 2 wedges for garnish.
- 2
Fill each glass generously with ice cubes. Plenty of ice keeps the drink cold and slows dilution, which is important in such a simple cocktail.
- 3
Divide the fresh lime juice between the glasses, then pour in the chilled ginger beer.
- 4
Slowly float the dark rum over the back of a spoon so it sits on top at first, creating the classic storm-cloud look. If you prefer, give it one gentle stir before drinking.
- 5
Garnish each glass with a lime wedge and serve immediately while ice-cold and fizzy.

Notes
- •Use a spicy ginger beer rather than ginger ale; the stronger ginger bite makes the drink authentic and balances the rum.
- •Traditionally, this cocktail is built directly in the glass rather than shaken.
- •For the best layered appearance, make sure the ginger beer is very cold and pour the rum slowly.
Background
The Dark 'n' Stormy is closely associated with Bermuda and became famous through the pairing of Goslings dark rum and ginger beer. It emerged in the early 20th century and remains one of the Caribbean region's most iconic highball-style cocktails.
