Qahwa m’Attara is a warming Moroccan-style spiced coffee with deep roasted notes layered with cardamom, cinnamon, and clove. It is lightly sweetened, intensely fragrant, and ideal for a quick, comforting cup served in small glasses or cups.

Spiced coffee brew

- 18 gground coffee
- 4green cardamom pods, lightly crushed
- 1 small (about 4 g)cinnamon stick

Bring the water to a boil in a small saucepan or coffee pot. While it heats, lightly crush the cardamom pods with the side of a knife to expose the seeds; this helps the spice infuse quickly without making the drink gritty.

As soon as the water boils, reduce to low heat and add the ground coffee, crushed cardamom, cinnamon stick, whole cloves, and sugar. Stir once, then let the coffee simmer very gently for 3 minutes. Avoid a hard boil, which can make the coffee taste harsh.

Remove from the heat and let the coffee stand for 2 minutes so the grounds and spices settle slightly and the flavors round out.

Pour slowly through a fine strainer into 2 small cups. Taste and add extra sugar if you like. Serve immediately while hot and fragrant.
