Preheat a grill pan or heavy frying pan over medium-high heat. While it heats, combine the lamb mince, ground cumin, ground allspice, sumac, fine salt, and black pepper in a bowl. Mix just until evenly combined, then shape into 2 thin oval patties about 1.5 cm thick so they cook quickly and evenly.

Slice the cucumber, cut the tomatoes into wedges, thinly slice the radishes, pick the mint leaves, and chop the romaine lettuce. Put them in a large bowl. Keeping the vegetables chunky helps them stay crisp under the warm lamb.

Whisk together the olive oil, pomegranate molasses, sumac, and fine salt for the dressing. It should taste bright, tangy, and slightly sharp.
